Cashew Butter Stir-Fry
Creamy, savoury and delicious! A fantastic way to get all those fabulous nutrients in a quick easy meal.

Sauce
- 3 - 4 tbspns Equal Exchange Cashew Nut Butter
- 2 tbspns tamari (or soy sauce)
- 3 - 4 tbspns water
Mix the sauce ingredients together to form a paste and set to one side.
Ingredients
- 1 - 2 tbspns Equal Exchange Olive Oil
- 1 red chilli, finely sliced
- 2 - 3 cloves of garlic, crushed
- 3cm piece of ginger, finely grated
- 1 - 2 sticks of celery, sliced
- approx. 250g smoked tofu, cubed
- Equal Exchange Organic Honey
- noodles
- 2 spring onions, finely sliced
- mixture of vegetables - broccoli, carrots, mushrooms, red pepper, baby corn, green beans and courgette, all thinly sliced (base quantities on number of people)
Preparation
Gently heat the olive oil in wok/frying pan. Add chilli, celery, ginger, garlic and stir-fry for 2 - 3 mins. Add smoked tofu and stir for another 2 mins. Add broccoli, carrots, corn and beans. Stir-fry for 3 mins, then add a big dollop of honey.
Cook for another minute. Add mushrooms, courgette and red pepper. Stir-fry for 1 - 2 mins, then add sauce. Mix well until sauce thickens, Turn off heat and add noodles (cooked as per manufactueres instructions).
Serve with spring onions sprinkled on top.
