Gooey Chocolate Brownies

Ingredients
- 3 heaped tbspns Equal Exchange organic cocoa
- 50g plain flour
- 225g Equal Exchange organic raw cane sugar
- 1 tsp baking powder
- 75g butter or margarine
- 2 eggs
- 1/2 tsp vanilla essence
- 100g chopped Equal Exchange brazils or cashews
- 100g Fairtrade seedless raisins
Preparation
Melt butter in a large pan then cool to lukewarm. Mix in the eggs, beating well. With a wooden spoon, stir in the flour, sugar, cocoa, baking powder and vanilla essence. Stir in the chopped nuts, blending well.
Spread into a lightly greased, foil lined 29x18cm tin. Bake at 180 degrees celsius (Gas Mark 4) for 30 minutes or until a knife comes out clean. Cook for 5 mins less if you want them extra gooey.
Cool for 15 minutes in teh tin. Then turn out onto a wire rack. Cut into squares. If you can't wait that long, then dive in head first!
